EATS 101 uses outbreak scenarios to show students how to complete an environmental assessment step-by-step, from the initiation of the investigation through wrap-up and reporting. Users learn how to conduct interviews, review restaurant records, observe food handling practices and procedures, take environmental samples, and use critical thinking to determine contributing factors and environmental antecedents to an outbreak. Additionally, the training provides guidance on how to identify an outbreak’s contributing factors and properly gather data to support the National Environmental Assessment Reporting System (NEARS).

This training will support the National Environmental Assessment Reporting System by helping team members investigating foodborne illnesses to understand their roles, responsibilities and collect data consistently and accurately. This national system uses standardized tracking to trace foodborne outbreak environmental assessment data, highlight trends, and aid in foodborne outbreaks. The training will also help those who do not report to NEARS to conduct more consistent, precise, and useful environmental health assessments to address foodborne outbreaks.

IACET Continuing Education Units (CEU):

The Centers for Disease Control and Prevention is authorized by IACET to offer 0.8 CEU's for this program.

Certified Public Health (CPH):

The Centers for Disease Control and Prevention is a pre-approved provider of Certified in Public Health (CPH) recertification credits and is authorized to offer 8 CPH recertification credits for this program.

TCEO does not provide CPE certificates. As a Pharmacist, you must log into the CPE monitor 8 weeks after the activity to obtain CE credit.
